Speed is not a variable with Titleist balls. Both Pro-Vs are decided by preference around the green and launch characteristics particular to each golfer. After that, you get to decide on price vs. performance moving down from NXT-Tour through DT-Trusoft. Not everyone can/will spend $4 a ball ($3 with the new 4 for 3 custom order available again this year), and not everyone is willing to compromise on control onto the green.

Properly fitting a ball is equally as important as getting your equipment fitted. Depending on your launch conditions you could fit a number of different balls. I have been playing Pro V1x for years and love them. Distance is solid and greenside control is awesome. If you want to spend a little less the NXT Tour line is great as well. I played that before making the switch to Pro V1x and honestly didn't see a drastic improvement on distance but my approach shots just checked up a bit better.

I would recommend asking a local golf pro. They can provide a far better explanation of what suits your game best. If you are looking to just try some out I would start with the NXT line and see how that goes. There are other good balls on the market but this is Team Titleist and we ride for the brand.

I think the best way to find out what ball works best for you is to try them on course. As you know, you're not shining full tilt every time. On some of the most critical shots in the short game, you're not swinging that hard at all! Take a sleeve of the balls you like best on a slow day and let them rip (I would recommend ProV1, 1X and possibly NXT). Try them all off the tee, with your hybrids, with your wedges and with your flat stick. Only you can decide what ball works best for you.

Great advice Josh. That's the approach I used to get settle on the NXT Tour S; not the least of which consideration for me was the availability in high vis yellow. I will play the Pro V1X when I'm seeing the ball well though.
